I am doing a 9 lb pork shoulder to bring to a budy's house for the game. Pulled pork sandwiches. I rubbed it, then wrapped it in seran wrap and let it sit for 24 hours. Then I took it out and let it sit out for 1 hour while the Bradley smoker was pre heating. I put it in at 5:00 PM and I plan on it being done around 12:00 or 1:00. I am smoking it at around 215.
