Margaret's Famous Corn Bread

This is my mom's recipe. And everyone says it is awesome.

1/2 cup Margarine
1 cup Sugar
4 eggs
1 15oz can Cream Corn
1 cup flour
1/4 teaspoon Salt
1 cup Corn Meal
4 teaspoon's Baking Powder
1/2 cup grated Jack Cheese
1/2 cup grated Chedder Cheese

Mix margarine and sugar.
Add eggs.
Add the rest of ingredients.
Pour into a greased 9 x 13 pan.
Bake at 350 degree's for 30 minutes.
Inportmant: Let stand for 15 minutes before cutting/serving.
Optional: Add diced jalopeno peppers.

Monterey Jack is a type of semi-hard cheese using cow's milk. It is commonly sold by itself, or mixed with Colby cheese to make a marbled cheese known as Colby-Jack (or Co-Jack).

In its earliest form, Monterey Jack was made by the Franciscan monks of Monterey, California, during the 1800s. A Californian businessman by the name of David Jack first began to mass market the cheese. He produced a mild, white cheese, which came to be known at first as "Jack's Cheese", and eventually "Monterey Jack".
