I make my own slinkys, in the .250 to .330. lead size.

I would like to start using steel shot, but finding steel (in those size) shot for replacing lead is difficult.

Can the GF community offer any suggestions?

I believe one can find Bismuth shot in nearly the right sizes you’ve noted here. It can be hard to find, but should be available on line. The density is near lead’s so the rigging S/B comparable to lead usage. It is an approved Non tox alternative to lead, but can be costly in comparison to steel... Rotometals carried Bismuth if memory serves...
