I would like to make some jerkey from various types of meat that I have available. When I started looking into jerkey making it seems like there are a few options. There is sliced meat vs. ground. Then as far as preperation there is dried vs. smoked.

Any input from experienced jerkey makers would be appreciated.

I dont se how you could make it with ground meat..sliced is the only way I know of.

Ken,

back in the day we used to make it with thinly sliced meat. The meat we used was just beef.

Whatever you decide, let me be the first to offer up my tastebuds as a tester. Tup:

I have done it both ways. Be sure if you do use ground meat do NOT add any fat ( suet ) . It really tants the meat and you can taste more fat than you really want.Ground meat isnt as chewy as thin sliced meat. A jerky shooter is the way to go if you do use ground.
