One package ground sausage(12-16 oz). This can be whatever flavor you like. I like maple or sage.
2 tbsp butter or margine.
1/4 cup of flour.
3 cups milk. I use 2% because it's what I buy.
salt and pepper to taste.

Start by browning sausage, I like to use an iron skillet.
Then remove the sausage but keep all the drippings in the skillet.
Add butter/margine and flour to the pan of drippings.
Simmer for about 3 minutes.
Slowly wisk in milk.
Return sausage to skillet
Reduce heat and simmer for about 10 minutes or until desired thickness is achived, You can always add more milk to thin it out or more flour to thicken it.

Serve over buttermilk biscuits, with a dash of hot sauce.

finely chop a little bit of onion and fry it with the sausage..or just add some onion powder..that will augement the flavor a little...that is definatley a sportsmans breakfast.
