offset heat, basically bake chicken without rolling it for an hour at 300 in your pit/
remove chicken from grill and place in a foil disposable pan 3" deep

pour your flavor of BBQ sauce on chicken & coat all pieces well.
Add extra seasonings like pepper and garlic and cover the pan, cook until chicken reaches safe temps.

I dont remove the chicken from the sauce, but after an hour at 300 degrees it can be removed and regrilled to make the sauces sticky on the outside.

I like it the same way, 300, indirect about an hour. I marinate and baste with Mojo Criolle, sprinkle a bit of Slap Yo Mama and finish with a splash of Stubbs. Have some going on the smoker tonight actually.

Nice. Wife and i took a break from chicken for a long time. The typical breast is too dry. When we came back to it, we started buying thighs. Oh man, i love chicken again. I started marinating in mustard, teriyaki and honey.

May have to try this with some organic chicken breast or something. I'm just fairly impatient when i'm hungry. lol

Now I got the big picture. You'd need a microscope to pull the stomach out of a steamer. Now razors are a different story
