Dr Hook 's super duper egg cure

Ingredients:

  • 1 quart water
  • 1 cup of 20 mule team borax
  • 1 cup sugar
  • 1 cup non-iodized salt
  • 2 tablespoons pro-glow red bait coloring

Split your skeins lengthwise, then cut them into your desired size. Be careful not to make your chunks too small. If they are too small the may not hold up well in the brine.

Boil water, borax, salt, sugar and bait coloring until all ingredients are completely dissolved. Stirring frequently.

Cool the brine to lukewarm. A cold water bath will help cool mixture faster.

Add eggs to brine and let soak for 10 to 15 minutes, stirring frequently. Be careful not to break up skeins when stirring.

Remove eggs and drain for 3 -4 hours.

Once eggs are completely drained of all liquid, lay them out on newspaper and let dry for 12 to 20 hours.

After eggs are dry to the touch, roll them in borax to lightly coat them.

Store eggs in container. Plastic containers like the ones pictured here can often be purchased at a grocery store deli.

You can also put cured eggs in a small Ziploc baggies and freeze. Once frozen they can be safely vacuum packed for long term storage.

Unfrozen eggs will last 1 to 2 months in the refrigerator.

These eggs are so good that even Crazy Avis eats them!
